Anchovies marinated in citrus from the Vega del Guadalquivir

First we clean the anchovies, remove the thorns and separate the loins, leave them on a tray. We salted

We add the lemon, lime and orange juice until they are covered. Let it marinate as long as we want, to my liking the less time the better.

We cut the avocados into very thin slices and the red onion to julienne.

To assemble the dish, we put a slice of avocado, a little tomato caviar and on top of it an anchovy loin, a little red onion and finely chopped coriander.
